  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1/2 cup eggnog
  • 1 tsp vanilla extract
  • 1/2 tsp rum extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a bowl, whisk flour, baking powder, nutmeg, cinnamon, and salt.
  3. In another bowl, beat butter, granulated sugar, and brown sugar until creamy.
  4. Add egg, eggnog, vanilla extract, and rum extract (if using). Mix well.
  5. Gradually add the dry ingredients to the wet ingredients. Mix until combined.
  6. Drop dough by tablespoonfuls onto prepared baking sheets.
  7. Bake for 10-12 minutes or until edges are lightly golden.
  8. Cool on baking sheets for 2 minutes, then transfer to wire racks.
