Instructions
- Preheat grill to medium-high heat.
- Grill corn, turning occasionally, until slightly charred (about 10 minutes).
- In a small bowl, mix mayonnaise and sour cream.
- Brush the grilled corn with the mayo-sour cream mixture.
- Sprinkle generously with cotija cheese.
- Dust with chili powder and smoked paprika.
- Squeeze lime juice over the corn.
- Garnish with chopped cilantro and salt to taste.
- Serve immediately.
