Description
A delicious German chocolate coconut pecan roll cake with rich chocolate cake, coconut-pecan filling, and a smooth chocolate glaze.

- 4 large eggs
- 3/4 cup granulated sugar
- 1 tsp vanilla extract
- 1/2 cup all-purpose flour
- 1/4 cup cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup shredded coconut
- 1/2 cup chopped pecans
- 1/2 cup evaporated milk
- 1/2 cup brown sugar
- 1/4 cup unsalted butter
- 1 egg yolk
- 1/2 tsp vanilla extract
- 1/2 cup semi-sweet chocolate chips
- 2 tbsp heavy cream
Instructions
- Preheat oven to 350°F. Line a jelly roll pan with parchment paper.
- Beat eggs and sugar until light and fluffy. Add vanilla.
- Sift flour, cocoa, baking powder, and salt. Fold into egg mixture.
- Spread batter evenly in pan. Bake for 12-15 minutes.
- Flip cake onto a towel, peel parchment, and roll while warm. Cool.
- Combine coconut, pecans, evaporated milk, brown sugar, butter, egg yolk, and vanilla in a saucepan. Cook until thickened.
- Unroll cake, spread filling, and re-roll.
- Melt chocolate chips with heavy cream and drizzle over cake.
Notes
- Use room-temperature eggs for better volume.
- Cool cake slightly before rolling to prevent ing.
- Store in the refrigerator for up to 3 days.
