- 1/2 cup almond flour
- 1/2 cup granulated sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 cup melted coconut oil
- 1/3 cup milk (dairy or non-dairy)
- 1 egg
- 1 tsp vanilla extract
- 1/2 cup fresh blueberries
Instructions
- Preheat air fryer to 350°F (180°C).
- In a bowl, mix gluten-free flour, almond flour, sugar, baking powder, and salt.
- Add melted coconut oil, milk, egg, and vanilla extract. Stir until combined.
- Gently fold in blueberries.
- Divide batter into greased muffin cups or silicone molds.
- Place in the air fryer basket and cook for 10-12 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Use fresh blueberries for best results.
- Adjust cooking time based on air fryer model.
