Description

A gluten-free version of classic chocolate eclairs made in the air fryer for a lighter, crispier texture.


Ingredients

  • 1 cup gluten-free flour blend
  • 1/2 cup water
  • 1/2 cup milk
  • 1/2 cup unsalted butter
  • 4 large eggs
  • 1/4 tsp salt
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup dark chocolate chips
  • 1 tbsp coconut oil

Instructions

  1. Preheat air fryer to 350°F (175°C).
  2. In a saucepan, combine water, milk, butter, and salt. Bring to a boil.
  3. Remove from heat and stir in gluten-free flour until a dough forms.
  4. Let dough cool slightly, then beat in eggs one at a time.
  5. Pipe dough into 4-inch logs on parchment paper.
  6. Air fry for 20 minutes until golden and puffed.
  7. Whip heavy cream, powdered sugar, and vanilla until stiff peaks form.
  8. Slice eclairs horizontally and fill with whipped cream.
  9. Melt chocolate chips with coconut oil and drizzle over eclairs.

  • Use a piping bag for even eclair shapes.
  • Let eclairs cool completely before filling.
  • Store unfilled eclairs in an airtight container for up to 2 days.
