A refreshing summer salad combining sweet grilled peaches with creamy burrata, fresh basil, and a drizzle of balsamic glaze.


Ingredients

  • 2 ripe peaches, halved and pitted
  • 1 ball (8 oz) burrata cheese
  • 1/4 cup fresh basil leaves
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic glaze
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat grill to medium-high heat.
  2. Brush peach halves with 1 tbsp olive oil.
  3. Grill peaches cut-side down for 2-3 minutes until char marks appear.
  4. Transfer peaches to a plate and let cool slightly.
  5. Tear burrata into pieces and arrange on a serving plate.
  6. Add grilled peaches and fresh basil leaves.
  7. Drizzle with remaining olive oil and balsamic glaze.
  8. Season with salt and pepper before serving.

Notes

  • Use ripe but firm peaches for best results.
  • Burrata can be substituted with fresh mozzarella.
