Ingredients

  • 2 cups cherry tomatoes
  • 1 zucchini, sliced
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 8 oz pasta (penne or fusilli)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 1/4 cup fresh basil, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a baking dish, place feta cheese in the center and surround with cherry tomatoes, zucchini, bell pepper, and garlic.
  3. Drizzle olive oil over the ingredients and season with salt, black pepper, and red pepper flakes.
  4. Bake for 25-30 minutes until the vegetables soften and the feta melts.
  5. Cook pasta according to package instructions. Drain and set aside.
  6. Remove baking dish from the oven. Stir the melted feta and roasted vegetables together.
  7. Add cooked pasta to the dish and mix well.
  8. Garnish with fresh basil before serving.
