- 2 cups broccoli florets, chopped
- 1 1/2 cups low-fat milk
- 1 cup shredded sharp cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1 tbsp olive oil
- 1 tsp Dijon mustard
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
Instructions
- Heat olive oil in a large pot over medium heat.
- Add macaroni and toast for 1-2 minutes, stirring frequently.
- Pour in milk and 1 cup of water, then bring to a simmer.
- Add broccoli, cover, and cook for 8-10 minutes until pasta is tender.
- Stir in cheddar, Parmesan, mustard, garlic powder, and pepper until creamy.
- Serve immediately.
Notes
- Use gluten-free pasta if needed.
- Add more milk if the sauce is too thick.
- Top with extra cheese for more richness.
