Ingredients

  • 2 cups long-grain white rice
  • 1 lb smoked sausage, sliced
  • 1 large onion, diced
  • 1 bell pepper, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups chicken broth
  • 2 tbsp Cajun seasoning
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 2 tbsp vegetable oil
  • Salt and black pepper to taste

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add sausage and cook until browned, about 5 minutes.
  3. Stir in onion, bell pepper, celery, and garlic. Cook until softened, about 5 minutes.
  4. Add rice, Cajun seasoning, paprika, and cayenne pepper. Stir well.
  5. Pour in diced tomatoes and chicken broth. Bring to a boil.
  6. Reduce heat to low, cover, and simmer for 20 minutes or until rice is tender.
  7. Season with salt and black pepper to taste.
  8. Serve hot.

Notes

  • Adjust cayenne pepper for more or less heat.
  • Use brown rice for a healthier option, but increase cooking time.
  • Store leftovers in an airtight container for up to 3 days.
