- 2 cups long-grain white rice
- 1 lb smoked sausage, sliced
- 1 large onion, diced
- 1 bell pepper, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 4 cups chicken broth
- 2 tbsp Cajun seasoning
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 2 tbsp vegetable oil
- Salt and black pepper to taste
Instructions
- Heat oil in a large pot over medium heat.
- Add sausage and cook until browned, about 5 minutes.
- Stir in onion, bell pepper, celery, and garlic. Cook until softened, about 5 minutes.
- Add rice, Cajun seasoning, paprika, and cayenne pepper. Stir well.
- Pour in diced tomatoes and chicken broth. Bring to a boil.
- Reduce heat to low, cover, and simmer for 20 minutes or until rice is tender.
- Season with salt and black pepper to taste.
- Serve hot.
Notes
- Adjust cayenne pepper for more or less heat.
- Use brown rice for a healthier option, but increase cooking time.
- Store leftovers in an airtight container for up to 3 days.
