A light and tangy lemon tart made in the air fryer, packed with protein for a healthier dessert option.


Ingredients

  • 1 cup almond flour
  • 2 tbsp coconut flour
  • 1 scoop vanilla protein powder
  • 2 tbsp melted coconut oil
  • 1 egg
  • 1 tbsp honey
  • 1/2 cup Greek yogurt
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tbsp powdered erythritol (optional)

Instructions

  1. Preheat air fryer to 350°F (180°C).
  2. Mix almond flour, coconut flour, protein powder, coconut oil, and egg in a bowl to form the crust.
  3. Press the crust mixture into a tart pan and air fry for 8 minutes.
  4. Whisk Greek yogurt, lemon juice, lemon zest, and honey in a separate bowl.
  5. Pour the filling over the baked crust and air fry for another 5 minutes.
  6. Let cool, then refrigerate for at least 1 hour before serving.

Notes

  • For a thicker crust, press the mixture firmly into the pan.
  • Adjust sweetness with erythritol if desired.
  • Store leftovers in the fridge for up to 3 days.
