Ingredients

  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 cups mixed vegetables (carrots, broccoli, zucchini)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Mix honey, mustard, olive oil, garlic powder, paprika, salt, and pepper in a bowl.
  3. Coat chicken with half the mixture.
  4. Toss vegetables with the remaining mixture.
  5. Place chicken and vegetables on a baking sheet.
  6. Bake for 25 minutes or until chicken reaches 165°F (74°C).
  7. Serve hot.
