Ingredients

  • 500g chicken breast, cubed
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp chili powder
  • 1/2 cup coconut milk
  • 1/2 cup chicken broth
  • Salt to taste
  • Fresh coriander for garnish

Instructions

  1. Preheat air fryer to 180°C (350°F).
  2. In a bowl, mix chicken with olive oil, garlic, ginger, curry powder, turmeric, cumin, coriander, and chili powder.
  3. Place chicken in the air fryer basket and cook for 10 minutes, shaking halfway.
  4. Add onion and cook for another 5 minutes.
  5. Pour in coconut milk and chicken broth, stir well, and cook for 5 more minutes.
  6. Check seasoning, add salt if needed.
  7. Garnish with fresh coriander before serving.

Notes

  • Cut chicken into even pieces for uniform cooking.
  • Adjust chili powder to your heat preference.
  • Serve with rice or naan bread.
