A quick and flavorful air fryer chicken curry ready in 30 minutes.
Ingredients

- 500g chicken breast, cubed
- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp chili powder
- 1/2 cup coconut milk
- 1/2 cup chicken broth
- Salt to taste
- Fresh coriander for garnish
Instructions
- Preheat air fryer to 180°C (350°F).
- In a bowl, mix chicken with olive oil, garlic, ginger, curry powder, turmeric, cumin, coriander, and chili powder.
- Place chicken in the air fryer basket and cook for 10 minutes, shaking halfway.
- Add onion and cook for another 5 minutes.
- Pour in coconut milk and chicken broth, stir well, and cook for 5 more minutes.
- Check seasoning, add salt if needed.
- Garnish with fresh coriander before serving.
Notes
- Cut chicken into even pieces for uniform cooking.
- Adjust chili powder to your heat preference.
- Serve with rice or naan bread.
