Description

A flavorful and juicy pork tenderloin marinated with tropical ingredients for an island-inspired dish.

Ingredients

Scale
  • 1 pork tenderloin (1.5 lbs)
  • 1/4 cup soy sauce
  • 1/4 cup pineapple juice
  • 2 tbsp brown sugar
  • 2 tbsp lime juice
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1/2 tsp red pepper flakes
  • 1 tbsp olive oil

Instructions

  1. In a bowl, mix soy sauce, pineapple juice, brown sugar, lime juice, garlic, ginger, and red pepper flakes.
  2. Place pork tenderloin in a resealable bag and pour the marinade over it. Seal and refrigerate for at least 2 hours.
  3. Heat olive oil in a skillet over medium-high heat. Remove pork from marinade and sear on all sides for 2-3 minutes.
  4. Transfer skillet to a preheated oven at 375°F and bake for 15-20 minutes, or until internal temperature reaches 145°F.
  5. Let rest for 5 minutes before slicing.

Notes

  • For extra flavor, grill the pork instead of baking.
  • Marinate overnight for deeper taste.
  • Serve with rice or a fresh salad.
