- 1/4 cup powdered erythritol
- 1/4 cup melted butter
- 2 large eggs
- 1/4 cup lemon juice
- 1 tbsp lemon zest
- 1/4 tsp vanilla extract
- 1/4 tsp baking powder
Instructions
- Preheat air fryer to 350°F (175°C).
- Mix almond flour, erythritol, and melted butter in a bowl to form the crust.
- Press the crust mixture into a greased air fryer-safe pan.
- Air fry the crust for 5 minutes.
- Whisk eggs, lemon juice, lemon zest, vanilla, and baking powder for the filling.
- Pour filling over the crust.
- Air fry for 10-12 minutes until set.
- Let cool before slicing.
