Ingredients

- 2 cups heavy cream
- 1/2 cup granulated sugar
- 2 lemons, zested and juiced
- 2 tbsp superfine sugar (for topping)
Instructions
- Heat cream and sugar in a saucepan until sugar dissolves.
- Remove from heat and stir in lemon zest and juice.
- Pour mixture into ramekins and chill for at least 4 hours.
- Sprinkle superfine sugar on top and caramelize with a kitchen torch.
Notes
- Use fresh lemon juice for best flavor.
- Chill thoroughly before caramelizing the top.
