- 4 large russet potatoes
- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup diced tomatoes
- 1/4 cup sliced green onions
- 1/4 cup chopped fresh cilantro
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F.
- Scrub potatoes, prick with a fork, and rub with olive oil and salt.
- Bake potatoes for 45-60 minutes until tender.
- While potatoes bake, cook ground beef in a skillet over medium heat until browned.
- Drain excess fat and stir in taco seasoning with 1/4 cup water.
- Simmer for 5 minutes and set aside.
- Once potatoes are done, slice open and fluff the insides with a fork.
- Fill each potato with ground beef, cheese, sour cream, tomatoes, green onions, and cilantro.
- Serve immediately.
Notes
- For a vegetarian option, replace ground beef with black beans.
- Adjust toppings based on your preference.
- Leftovers can be stored in the fridge for up to 2 days.
