A fresh and vibrant Mediterranean chopped salad packed with crisp vegetables, olives, and feta cheese.
Ingredients

- 2 cups chopped romaine lettuce
- 1 cup chopped cucumber
- 1 cup chopped tomatoes
- 1/2 cup chopped red onion
- 1/2 cup chopped bell pepper
- 1/4 cup sliced Kalamata olives
- 1/4 cup crumbled feta cheese
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Wash and chop all vegetables.
- Combine lettuce, cucumber, tomatoes, red onion, bell pepper, and olives in a large bowl.
- In a small bowl, whisk olive oil, lemon juice, oregano, salt, and pepper.
- Pour dressing over the salad and toss gently.
- Sprinkle feta cheese on top.
- Serve immediately.

- Add grilled chicken or chickpeas for extra protein.
