- 500g ground beef
- 1/2 cup breadcrumbs
- 1 egg
- 1 tsp dried oregano
- 1 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 1 cup cooked quinoa
- 1 cup diced cucumber
- 1 cup cherry tomatoes, halved
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped parsley
- 1/4 cup tzatziki sauce
Instructions
- Preheat oven to 200°C (400°F).
- Mix ground beef, breadcrumbs, egg, oregano, cumin, salt, and pepper in a bowl.
- Shape into meatballs and place on a baking sheet.
- Bake for 20 minutes or until cooked through.
- Cook quinoa according to package instructions.
- Divide quinoa among bowls and top with meatballs, cucumber, tomatoes, feta, and parsley.
- Drizzle with tzatziki sauce before serving.

- Use lean ground beef for a healthier option.
- For extra flavor, marinate meatballs in olive oil and herbs for 30 minutes before baking.
