- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 6 vanilla wafer cookies, crushed
- Optional toppings: fresh berries, chocolate sauce, caramel
Instructions
- Preheat oven to 350°F (175°C).
- Line a mini muffin tin with liners.
- Place a small amount of crushed vanilla wafers at the bottom of each liner.
- In a bowl, beat cream cheese and sugar until smooth.
- Add egg and vanilla, mixing well.
- Spoon the mixture into the liners, filling each 3/4 full.
- Bake for 12-15 minutes or until set.
- Let cool, then chill in the fridge for 1 hour.
- Add toppings before serving.

- Use room temperature cream cheese for smoother mixing.
- For a firmer texture, chill longer before serving.
- Store leftovers in the fridge for up to 3 days.
