- 2 tbsp olive oil
- 4 large yellow onions, thinly sliced
- 1 tsp sugar
- 1 tbsp balsamic vinegar
- 3 cloves garlic, minced
- 8 oz pasta (fusilli or penne)
- 4 cups beef broth
- 1 tsp thyme
- 1 tsp black pepper
- 1 cup shredded Gruyère cheese
Instructions
- Heat oil in a large pot over medium heat.
- Add onions and sugar. Cook for 20 minutes until caramelized.
- Stir in balsamic vinegar and garlic. Cook for 1 minute.
- Add pasta, broth, thyme, and pepper. Bring to a boil.
- Reduce heat and simmer for 12 minutes until pasta is tender.
- Top with cheese. Cover until melted (2 minutes).
