Description

Pan-seared cod served in a flavorful white wine tomato basil sauce.


Ingredients

Scale
  • 4 cod fillets (6 oz each)
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 2 cloves garlic, minced
  • 1 shallot, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup dry white wine
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Season cod fillets with salt and pepper.
  2. Heat olive oil and butter in a skillet over medium-high heat.
  3. Sear cod for 3-4 minutes per side until golden. Remove and set aside.
  4. In the same skillet, sauté garlic and shallot for 1-2 minutes.
  5. Add cherry tomatoes and cook for 2 minutes.
  6. Pour in white wine and simmer for 3-4 minutes.
  7. Return cod to the skillet, spoon sauce over it, and cook for 1-2 minutes.
  8. Sprinkle with fresh basil before serving.

Notes

  • Use fresh basil for best flavor.
  • Choose a dry white wine like Sauvignon Blanc.
  • Do not overcook the cod to keep it tender.
