Description
Pan-seared cod served in a flavorful white wine tomato basil sauce.
Ingredients

- 4 cod fillets (6 oz each)
- 1 tbsp olive oil
- 1 tbsp butter
- 2 cloves garlic, minced
- 1 shallot, finely chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup dry white wine
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- Season cod fillets with salt and pepper.
- Heat olive oil and butter in a skillet over medium-high heat.
- Sear cod for 3-4 minutes per side until golden. Remove and set aside.
- In the same skillet, sauté garlic and shallot for 1-2 minutes.
- Add cherry tomatoes and cook for 2 minutes.
- Pour in white wine and simmer for 3-4 minutes.
- Return cod to the skillet, spoon sauce over it, and cook for 1-2 minutes.
- Sprinkle with fresh basil before serving.
Notes
- Use fresh basil for best flavor.
- Choose a dry white wine like Sauvignon Blanc.
- Do not overcook the cod to keep it tender.
