- 12 large mushrooms
- 1/2 cup pumpkin puree
- 4 oz goat cheese
- 1 tbsp olive oil
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F.
- Clean mushrooms and remove stems.
- Mix pumpkin puree, goat cheese, garlic powder, salt, and pepper.
- Stuff mushrooms with the mixture.
- Drizzle olive oil on top.
- Bake for 20 minutes.
- Serve warm.
