Ingredients

- 1 cup cooked pumpkin (or canned pumpkin puree)
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 tbsp tahini
- 2 cloves garlic, minced
- 2 tbsp lemon juice
- 1 tsp ground cumin
- 1/2 tsp salt
- 2 tbsp olive oil
- 1/4 cup water (adjust for consistency)
- 2 tbsp dukkah (for topping)
Instructions
- In a food processor, blend pumpkin, chickpeas, tahini, garlic, lemon juice, cumin, and salt until smooth.
- Slowly add olive oil and water while blending until the hummus reaches your desired consistency.
- Transfer to a serving bowl and sprinkle dukkah evenly on top.
- Serve with pita bread, crackers, or fresh vegetables.
Notes
- For a smoother texture, peel the chickpeas before blending.
- Adjust water for thinner or thicker hummus.
- Store leftovers in an airtight container for up to 3 days.
