Ingredients

  • 1/4 cup honey
  • 1/4 cup granulated sugar
  • 1/2 cup shelled pistachios, chopped
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix flour, baking soda, and salt.
  3. In another bowl, cream butter, sugar, and honey until smooth.
  4. Add vanilla extract to the butter mixture.
  5. Gradually mix dry ingredients into the wet ingredients.
  6. Fold in chopped pistachios.
  7. Scoop dough into small balls and place on the baking sheet.
  8. Flatten slightly with a fork.
  9. Bake for 10-12 minutes or until edges turn golden.
  10. Let cool before serving.
