- 1 lb ground beef
- 1 cup sliced mushrooms
- 2 cups fresh spinach
- 1 bag tortilla chips
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup diced tomatoes
- 1/4 cup sliced jalapeños
- 1/4 cup sour cream
- 1/4 cup guacamole
- 1 tsp taco seasoning
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Cook ground beef in a skillet over medium heat until browned. Drain excess fat.
- Add mushrooms and spinach to the skillet, cook until spinach wilts.
- Season with taco seasoning, salt, and pepper.
- Spread tortilla chips on a sheet pan in a single layer.
- Sprinkle half the cheese over the chips.
- Top with the beef, mushroom, and spinach mixture.
- Add remaining cheese.
- Bake for 10 minutes or until cheese melts.
- Top with diced tomatoes, jalapeños, sour cream, and guacamole before serving.
Notes
- Use a mix of cheeses for extra flavor.
- Add black beans or corn for extra texture.
- Adjust spice level with more or less jalapeños.
