Description
A classic Southern squash casserole made with yellow squash, cheese, and a buttery cracker topping.
Ingredients

- 2 lbs yellow squash, sliced
- 1/2 cup chopped onion
- 1/2 cup butter, divided
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 tsp salt
- 1/2 tsp black pepper
- 1 sleeve buttery crackers, crushed
Instructions
- Preheat oven to 350°F.
- Boil squash and onion until tender, about 10 minutes. Drain.
- Mash squash and mix with 1/4 cup melted butter, cheese, sour cream, salt, and pepper.
- Spread mixture into a greased baking dish.
- Top with crushed crackers and drizzle with remaining melted butter.
- Bake for 25 minutes until golden brown.
Notes
- Use fresh yellow squash for best texture.
- For extra crunch, toast crackers before crushing.
- Can substitute sour cream with Greek yogurt.
