2 boneless, skinless chicken breasts (cubed or sliced thin)

2 cups fresh, canned (drained), or thawed frozen peach slices

1 jalapeño or chipotle pepper (deseeded and diced)

1 small onion, sliced thin

2 garlic cloves, minced

2 tbsp olive oil

1 tbsp honey or brown sugar

1 tbsp apple cider vinegar

1 tsp smoked paprika

Salt & pepper to taste
Optional Add-ons:

1 cup shredded cheese (Monterey Jack, mozzarella, or cheddar)

½ tsp red pepper flakes (for extra heat)

Instructions

Preheat oven to 375°F (190°C). Lightly grease a 9×13 baking dish.

Sear the chicken: In a skillet, heat 1 tbsp olive oil. Season chicken with salt, pepper, and paprika. Sauté until just browned, about 5–6 minutes.

Mix the base: In a large bowl, combine peaches, jalapeño, onion, garlic, vinegar, honey, and remaining olive oil. Add the sautéed chicken and stir to coat everything evenly.

Assemble the casserole: Pour mixture into the baking dish. Optional: Sprinkle cheese over the top.

Bake uncovered for 25–30 minutes until bubbly and golden.

Cool slightly before serving. Garnish with fresh herbs if desired.
Notes
For extra depth, use chipotle in adobo sauce instead of jalapeños.
Frozen peaches work well but be sure to pat them dry to prevent excess liquid.
If making ahead, assemble the casserole and store covered in the fridge up to 24 hours before baking.
