- 2 lbs chicken thighs, boneless and skinless
- 1 cup pineapple juice
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 2 tbsp honey
- 2 garlic cloves, minced
- 1 tsp ginger, grated
- 1 tbsp cornstarch
- 2 tbsp water
- 1 cup pineapple chunks
- 2 green onions, sliced
Instructions
- In a bowl, mix pineapple juice, soy sauce, brown sugar, honey, garlic, and ginger.
- Add chicken thighs to the marinade. Cover and refrigerate for 30 minutes.
- Heat a skillet over medium heat. Remove chicken from marinade and cook for 6 minutes per side.
- Pour remaining marinade into the skillet. Simmer for 5 minutes.
- Mix cornstarch and water. Stir into the sauce to thicken.
- Add pineapple chunks. Cook for 2 more minutes.
- Garnish with green onions before serving.
Notes
- For extra crispiness, grill the chicken instead of pan-frying.
- Adjust honey or sugar for desired sweetness.
- Serve with rice or noodles.
