- 1 lb chicken breast, grilled and sliced
- 2 ears corn, grilled and kernels removed
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 tsp chili powder
- 1/4 tsp smoked paprika
- 1/4 cup crumbled cotija cheese
- 1 lime, juiced
- 1/4 cup chopped cilantro
- Salt and pepper to taste
Instructions
- Cook rice according to package instructions.
- Grill chicken until fully cooked, then slice.
- Grill corn until lightly charred, then cut kernels off the cob.
- Mix mayonnaise, sour cream, chili powder, smoked paprika, lime juice, salt, and pepper in a bowl.
- Toss grilled corn with the sauce.
- Assemble bowls with rice, sliced chicken, and coated corn.
- Top with crumbled cotija cheese and chopped cilantro.
