  • 1 egg
  • 1 tsp vanilla extract
  • 1/4 cup sugar-free sweetener (like erythritol)
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat your air fryer to 350°F (175°C).
  2. In a large bowl, mix wheat bran, whole wheat flour, baking powder, baking soda, and salt.
  3. In another bowl, whisk almond milk, applesauce, egg, vanilla extract, and sugar-free sweetener.
  4. Combine wet and dry ingredients until just mixed. Fold in walnuts if using.
  5. Spoon batter into greased muffin cups or silicone molds, filling each 3/4 full.
  6. Place muffins in the air fryer basket, leaving space between them.
  7. Air fry for 12-15 minutes or until a toothpick comes out clean.
