- 1 cup whole wheat flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup unsweetened almond milk
- 1/4 cup unsweetened applesauce
- 1 egg
- 1 tsp vanilla extract
- 1/4 cup sugar-free sweetener (like erythritol)
- 1/4 cup chopped walnuts (optional)
Instructions
- Preheat your air fryer to 350°F (175°C).
- In a large bowl, mix wheat bran, whole wheat flour, baking powder, baking soda, and salt.
- In another bowl, whisk almond milk, applesauce, egg, vanilla extract, and sugar-free sweetener.
- Combine wet and dry ingredients until just mixed. Fold in walnuts if using.
- Spoon batter into greased muffin cups or silicone molds, filling each 3/4 full.
- Place muffins in the air fryer basket, leaving space between them.
- Air fry for 12-15 minutes or until a toothpick comes out clean.
- Let cool for 5 minutes before serving.
Notes
- Store leftovers in an airtight container for up to 3 days.
- For extra flavor, add cinnamon or nutmeg to the batter.
