Ingredients

- 2 boneless, skinless chicken
- 1 cup rice
- 1/4 cup sweet chili sauce
- 1 tbsp soy sauce
- 1 tbsp vegetable oil
- 1/2 cup diced bell peppers
- 1/4 cup chopped green onions
- 1 tsp minced garlic
- 1 tsp grated ginger
Instructions
- Cook rice according to package instructions.
- Cut chicken into bite-sized pieces.
- Heat oil in a pan over medium heat.
- Add garlic and ginger, sauté for 30 seconds.
- Add chicken and cook until browned.
- Stir in bell peppers and cook for 2 minutes.
- Pour sweet chili sauce and soy sauce over the chicken.
- Simmer for 3 minutes.
- Serve chicken over rice.
- Garnish with green onions.
Notes
- Use jasmine rice for best results.
- Adjust chili sauce for more or less heat.
- Add vegetables like carrots or snap peas if desired.
