- 4 large russet potatoes
- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup diced tomatoes
- 1/4 cup chopped green onions
- 1/4 cup sliced black olives
- 1/4 cup chopped cilantro
Instructions
- Preheat oven to 400°F (200°C).
- Scrub potatoes and pierce with a fork. Bake for 45-60 minutes until tender.
- Brown ground beef in a skillet, drain excess fat, and stir in taco seasoning.
- Cut baked potatoes open and fluff the insides with a fork.
- Top with seasoned beef, cheese, sour cream, tomatoes, green onions, olives, and cilantro.
