- 4 large bell peppers
- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup cooked rice
- 1 cup shredded cheese
- 1/2 cup diced tomatoes
- 1/4 cup chopped onions
- 1/4 cup sour cream
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F.
- Cut the tops off the bell peppers and remove seeds.
- Brown the ground beef in a skillet with olive oil.
- Add taco seasoning and cook as directed.
- Mix cooked rice, beef, tomatoes, and onions in a bowl.
- Stuff the peppers with the mixture.
- Top with shredded cheese.
- Bake for 25 minutes or until peppers are tender.
- Serve with sour cream.

- Use any color bell peppers.
- Substitute ground turkey for beef if preferred.
