Description

Ingredients

  • 1 cup pineapple juice
  • 3 tbsp achiote paste
  • 2 tbsp white vinegar

  • 1 tsp ground cumin
  • 1 tsp paprika
  • 3 cloves garlic, minced
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/2 onion, sliced
  • 1 cup pineapple chunks
  • Corn tortillas
  • Fresh cilantro, chopped
  • Lime wedges

Instructions

  1. Mix pineapple juice, achiote paste, vinegar, oregano, cumin, paprika, garlic, black pepper, and salt in a bowl.
  2. Add pork slices and onion to the marinade. Cover and refrigerate for at least 4 hours.
  3. Heat a grill or skillet over medium-high heat. Cook the marinated pork until fully done.
  4. Grill pineapple chunks until lightly charred.
  5. Warm the tortillas on the grill or in a dry pan.
  6. Assemble tacos with pork, grilled pineapple, cilantro, and a squeeze of lime.

Notes

  • Use freshly squeezed pineapple juice for the best flavor.
  • Marinate the pork overnight for deeper flavor.
