Ingredients

  • 1 1/2 cups grated carrots
  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil (melted)
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp vanilla extract
  • 1/4 cup almond milk

Instructions

  1. Preheat the air fryer to 350°F (175°C).
  2. In a bowl, mix grated carrots, flour, almond flour, brown sugar, baking powder, cinnamon, and nutmeg.
  3. Add maple syrup, melted coconut oil, vanilla extract, and almond milk. Stir until well combined.
  4. Pour the batter into a greased cake pan that fits your air fryer.
  5. Place the pan in the air fryer and cook for 20-25 minutes, or until a toothpick comes out clean.
  6. Let it cool before serving.
