- 1 1/2 cups grated carrots
- 1 cup all-purpose flour
- 1/2 cup almond flour
- 1/2 cup brown sugar
- 1/4 cup maple syrup
- 1/4 cup coconut oil (melted)
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp vanilla extract
- 1/4 cup almond milk
Instructions
- Preheat the air fryer to 350°F (175°C).
- In a bowl, mix grated carrots, flour, almond flour, brown sugar, baking powder, cinnamon, and nutmeg.
- Add maple syrup, melted coconut oil, vanilla extract, and almond milk. Stir until well combined.
- Pour the batter into a greased cake pan that fits your air fryer.
- Place the pan in the air fryer and cook for 20-25 minutes, or until a toothpick comes out clean.
- Let it cool before serving.
Notes
- Store leftovers in an airtight container for up to 3 days.
- For extra flavor, add raisins or walnuts.
- Top with vegan cream cheese frosting if desired.
