Ingredients

  • 1 cup raw cashews (soaked for 4 hours)
  • 2 tbsp nutritional yeast
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped walnuts (for coating)

Instructions

  1. Drain soaked cashews and blend until smooth.
  2. Add nutritional yeast, lemon juice, garlic powder, onion powder, and salt. Blend again.
  3. Fold in chopped parsley by hand.
  4. Roll mixture into small balls.
  5. Coat each ball with chopped walnuts.
  6. Chill in refrigerator for 1 hour before serving.

  • For nut-free version, substitute sunflower seeds for cashews.
