Ingredients

  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/2 avocado, diced
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat air fryer to 350°F (175°C).
  2. Toss mixed greens, cherry tomatoes, cucumber, and red onion in olive oil.
  3. Air fry for 3 minutes.
  4. Transfer to a bowl and add avocado.
  5. Drizzle with lemon juice and season with salt and pepper.
  6. Toss gently and serve.
