Description
A quick and healthy vegetarian salad made in an air fryer.
Ingredients

- 2 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/2 avocado, diced
- 1 tbsp olive oil
- 1 tsp lemon juice
- Salt and pepper to taste
Instructions
- Preheat air fryer to 350°F (175°C).
- Toss mixed greens, cherry tomatoes, cucumber, and red onion in olive oil.
- Air fry for 3 minutes.
- Transfer to a bowl and add avocado.
- Drizzle with lemon juice and season with salt and pepper.
- Toss gently and serve.
