Ingredients

  • 2 cups water
  • 1 tbsp olive oil
  • 1 bell pepper, diced
  • 1 carrot, julienned
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tsp ginger, grated

Instructions

  1. Rinse quinoa under cold water.
  2. Cook quinoa in 2 cups water for 15 minutes.
  3. Heat olive oil in a pan.
  4. Sauté garlic and ginger for 30 seconds.
  5. Add vegetables and stir fry for 5 minutes.
  6. Mix in cooked quinoa and soy sauce.
  7. Cook for 2 more minutes.
