Ingredients

- 2 cups mixed vegetables (bell peppers, zucchini, carrots)
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup crumbled feta cheese
- 1/4 cup yogurt
- 1 clove garlic, minced
- 1 tbsp lemon juice
Instructions
- Preheat oven to 400°F (200°C).
- Toss vegetables with olive oil, salt, and pepper. Spread on a baking sheet.
- Roast for 20-25 minutes until tender.
- While vegetables roast, mix feta, yogurt, garlic, and lemon juice in a bowl.
- Drizzle sauce over roasted vegetables before serving.
