  • 1½ cups low-fat cottage cheese (blended smooth)

  • 2 large eggs

  • 1 cup shredded mozzarella or cheddar cheese

  • 1 cup chopped spinach (fresh or frozen, drained)

  • ½ cup diced onions

  • ½ cup chopped bell peppers

  • ½ tsp garlic powder

  • Salt and black pepper to taste

  • Optional: ½ cup cooked ground turkey or sausage for added protein


Instructions

  • Preheat oven to 375°F (190°C). Lightly grease an 8×8-inch baking dish.

  • Blend cottage cheese in a blender or food processor until smooth.

  • In a bowl, whisk eggs and combine with blended cottage cheese.
