Description
A no-bake cheesecake made with Weetabix biscuits as the base.
Ingredients

- 8 Weetabix biscuits
- 100g butter
- 250g cream cheese
- 100g icing sugar
- 1 tsp vanilla extract
- 300ml double cream
Instructions
- Crush Weetabix biscuits finely.
- Melt butter and mix with crushed Weetabix.
- Press mixture into a cake tin to form the base.
- Chill in fridge for 30 minutes.
- Whisk cream cheese, icing sugar, and vanilla until smooth.
- Whip double cream until thick and fold into cheese mixture.
- Spread filling over chilled base.
- Refrigerate for at least 4 hours before serving.
Notes
- Use full-fat cream cheese for best texture.
- Add fruit toppings if desired.
