- 2 lbs chicken breast, cooked and shredded
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cans white beans, drained
- 4 cups chicken broth
- 1 cup sour cream
- 1 tsp cumin
- 1 tsp oregano
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup shredded cheese
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add shredded chicken, white beans, chicken broth, cumin, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in sour cream and shredded cheese until melted.
- Serve hot with optional toppings like cilantro or avocado.
