A zesty and healthy pasta salad inspired by Mexican street corn, perfect for satisfying light cravings.
Ingredients

- 8 oz pasta (penne or fusilli)
- 2 cups corn kernels (fresh or frozen)
- 1/2 cup Greek yogurt
- 1/4 cup mayonnaise
- 1 lime (juiced)
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/4 cup cotija cheese (crumbled)
- 1/4 cup cilantro (chopped)
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions, drain, and set aside.
- In a large bowl, mix Greek yogurt, mayonnaise, lime juice, chili powder, and smoked paprika.
- Add cooked pasta, corn, and cotija cheese to the bowl. Toss until well coated.
- Garnish with chopped cilantro. Season with salt and pepper to taste.
- Serve chilled or at room temperature.
Notes
- For extra crunch, char the corn in a pan before adding.
- Substitute feta cheese if cotija is unavailable.
- Add diced avocado for creaminess.
