Description
A quick and healthy air fryer butternut squash salad with fresh greens and a light dressing.
Ingredients

- 1 small butternut squash (peeled and cubed)
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 cups mixed salad greens
- 1/4 cup crumbled feta cheese
- 2 tbsp pumpkin seeds
- 1 tbsp balsamic vinegar
Instructions
- Preheat air fryer to 375°F.
- Toss butternut squash cubes with olive oil, salt, and pepper.
- Air fry for 12-15 minutes, shaking halfway, until tender.
- Let squash cool slightly.
- Assemble salad greens in a bowl.
- Top with roasted squash, feta cheese, and pumpkin seeds.
- Drizzle with balsamic vinegar.
- Toss gently before serving.
