Sweet potato casserole cups made in an air fryer for a quick and delicious dessert or side dish.
Ingredients

- 2 cups mashed sweet potatoes
- 1/4 cup brown sugar
- 1 egg
- 1/4 cup milk
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 cup chopped pecans
- 1/4 cup mini marshmallows
Instructions
- Preheat air fryer to 350°F (175°C).
- Mix mashed sweet potatoes, brown sugar, egg, milk, vanilla, cinnamon, and nutmeg in a bowl.
- Spoon the mixture into greased muffin cups, filling each halfway.
- Top with chopped pecans and mini marshmallows.
- Air fry for 10-12 minutes until golden and set.
- Let cool slightly before serving.
Notes
- Use leftover mashed sweet potatoes for convenience.
- Adjust sweetness by adding more or less brown sugar.
- For a crispier top, broil for 1-2 minutes after air frying.
