- 1 cup cooked quinoa
- 1 cup canned black beans, drained and rinsed
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat your air fryer to 375°F (190°C).
- In a large bowl, mash the black beans with a fork until mostly smooth.
- Add the quinoa, breadcrumbs, onion, garlic, olive oil, smoked paprika, oregano, salt, and pepper. Mix well.
- Form the mixture into small balls, about 1 inch in diameter.
- Place the meatballs in the air fryer basket in a single layer, leaving space between them.
- Cook for 10-12 minutes, shaking the basket halfway through, until golden brown and firm.
- Serve warm with your favorite sauce or dip.
Notes
- You can use panko breadcrumbs for a crispier texture.
- Store leftovers in an airtight container in the fridge for up to 3 days.
- These meatballs can also be baked in the oven at 375°F (190°C) for 15-20 minutes.
